Zao/糟: The by-product from Qinghong brewing
It’s soft, aromatic, and gently infused with residual wine, often used in coloring, marinades, or condiments in home dishes.
In Fuzhou cuisine, Zao has long been a staple ingredient.
We invite chefs to experiment with it — reimagining Zao across Asian and global cuisines. Through these collaborations, Zao moves beyond tradition into new culinary languages.
